Sausage, Salami and Mascarpone Pasta

Serves 4.

500g pork sausage meat, you could use a flavoured one fennel would work well.

2 garlic cloves

1 red chilli (whatever you fancy)

150g salami

1 tbsp chilli flakes

400ml passata

Small bunch of basil

150g mascarpone

50g Parmesan

500g Trofie pasta (or whatever you want)

Olive oil

Salt

Black pepper

More Parmesan to serve.

1. Remove the sausages from the casings, heat a generous amount of olive oil in a pan then add the sausage meat breaking it up well.

2. Once the sausage is browned add the garlic and chilli followed by the salami. Cook this out for 2 mins

3. Add the passata season with salt and pepper then follow with the basil, mascarpone and Parmesan stir well, leaving to simmer on a low heat while you cook the pasta.

4. Add the pasta to boiling salted water and cook to al dente this took 12 mins here. Use some of the pasta water to loosen the sauce. Removing the basil at this point.

5. Add the cooked pasta to the sauce and stir/toss through well, serve with extra Parmesan and pepper.
