Perfect Scrambled Eggs

3-4 eggs per person

20g butter per person

1 tablespoon double cream per person

Handful of chives

Salt and pepper

Streaky Bacon

Brioche Buns

Equal parts ketchup, hot sauce and maple syrup

1. brown the butter and chill completely add the eggs break them up the put the pan on a low heat. Stir regularly making sure you get it all away from the pan sides.

2. When the soft scramble forms turn the heat off and add the cream, season to taste and add chives
