Pan Con Tomate

Serves 2

2 large or 4 medium sized ripe room temp tomatoes

Good olive oil

Salt

Garlic clove

Crusty bread

Iberico ham (optional)

  1. Grate the tomato flesh and seeds into a bowl, keep the skins they can be roasted on a low heat for a lovely addition to pasta sauces

  2. Sieve the flesh to remove the tomato water this is delicious so keep it to drink or put in a cocktail

  3. Mix the grated tomato with salt and olive oil

  4. Toast your crusty bread in a hot pan with olive oil

  5. While the bread is still hot rub with a garlic clove

  6. Top the toasted bread with the tomato drizzle with more olive oil and top with the ham
