Pan Con Tomate
Serves 2
2 large or 4 medium sized ripe room temp tomatoes
Good olive oil
Salt
Garlic clove
Crusty bread
Iberico ham (optional)
Grate the tomato flesh and seeds into a bowl, keep the skins they can be roasted on a low heat for a lovely addition to pasta sauces
Sieve the flesh to remove the tomato water this is delicious so keep it to drink or put in a cocktail
Mix the grated tomato with salt and olive oil
Toast your crusty bread in a hot pan with olive oil
While the bread is still hot rub with a garlic clove
Top the toasted bread with the tomato drizzle with more olive oil and top with the ham
