Chicken Fat Mayonnaise

150g chicken skin

4 garlic cloves

Few sprigs of thyme

100ml sunflower or veg oil

Pinch of salt

2 egg yolks

1 tbsp Dijon mustard

Squeeze of lemon

Pinch of salt

Black pepper

Lemon zest

Dash of hot sauce (optional)

1. Add the chicken skin to a pan with the garlic, thyme and oil. Over a medium heat render the fat into the oil and crisp up the skin. Remove the garlic and thyme once the garlic is tender and crush that up.

2. Strain off the crispy skin and set to one side, allow the chicken fat oil to cool completely

3. Add the egg yolks, mustard and lemon to a mixing bowl with a pinch of salt and whisk together

4. Stream in the cooled chicken fat continually whisking to form a mayo. Season with the crushed garlic, lemon zest, black pepper and hot sauce

5. Cut up the crispy chicken skin add a pinch of sea salt and serve on top of the mayo.
