Soy Braised Short Rib
You’ll need
4 single muscle beef short rib
50ml dark soy
50ml light soy
100ml mirin
50ml rice vinegar
3 shallots peeled, roughly diced
6 garlic cloves
50g black treacle
500ml water
Method
blend together the soys, mirin, vinegar, shallots and garlic
Pour this over the ribs and cover to marinate for at least 4 hours but preferably 8
Pre heat your to 120c fan, pour in the water to the marinated beef cover with tin foil and cook for 8 hours in the oven
With the remaining stock/liquid strain this through a sieve and reduce down with the treacle until thick and sticky to glaze the rib
serve with honey and chilli roasted root vegetables
