Smoked Bacon Hollandaise

Smoked Bacon Hollandaise - how do you make an already delicious sauce even more delicious add bacon

100g smoked pancetta or bacon

200g butter

4 egg yolks

1 tsp white wine vinegar

Lemon juice and zest

4-5 chives

Salt and pepper

1. Add the pancetta to a dry pan, over a medium heat render the fat until it crisps up. Add the butter and get it foaming turn to low for 2 mins then strain it off, add the pancetta bits to an oven tray and dry out at 120c for 20 mins.

2. Add the egg yolks to a bowl over gently simmering water with a splash of white wine vinegar and whisk until doubled in size then stream in the hot pancetta butter slowly continually whisking to form the Hollandaise. Season this with salt, pepper and lemon juice before adding chopped chives
