Remoulade

Remoulade - there’s literally hundreds of different versions of this sauce from various countries and styles. This is just a bit of all that to make a delicious spicy, acidic, vibrant mayonnaise sauce.

2 egg yolks

Juice of 1/4 lemon

1 tbsp Dijon mustard

200ml veg oil or sunflower oil

Salt

Pepper

1 tsp minced garlic

1-2 tbsp hot sauce

2 tbsp chopped capers

2 tbsp chopped gherkins

Handful flat parsley finely sliced

Handful of chives finely sliced

Splash of pickle juice

1. Combine the eggs, lemon juice and mustard. Stream in the oil constantly whisking to form the mayo base

2. Season to taste with salt and pepper then add the rest of the ingredients

3. Finish with pickle juice and this can be stored in a fridge for up to 4 days
