Miso Brown Butter Cookies
Makes 10 big cookies
170g salted butter
220g dark brown sugar
80g caster sugar
1 large egg
1 large egg yolk
1 tsp vanilla extract
1 tbsp white miso paste
255g plain flour
1 tsp bicarb/baking soda
1. melt the butter and take it to a nut brown stage you’ll be able to smell it when it changes remove from the heat immediately
2. Add to a mixing bowl with the brown sugar and caster sugar then allow to cool before adding the egg and egg yolk
3. Add the vanilla and miso paste
4. Sieve in the flour and bicarbonate soda then fold it through until the dough forms
5. Roll into balls a little bigger than a golf ball then freeze for 15 mins before baking at 180c for 10 mins. Make sure they have plenty of room to spread out.
