Coconut Creamed Spinach
2 tbsp coconut oil
1 tsp onion seeds
1 tsp cumin seeds
1 tsp chilli flakes
2 large onions
Pinch of salt
2 tbsp tomato paste
1 tbsp minced garlic
1 tbsp minced ginger
1 tin of coconut milk
300g baby spinach (washed)
3 tbsp coconut oil
1 tsp onion seeds
1 tsp cumin seeds
1 tsp chilli powder
1 tsp chilli flakes
1/2 tsp salt
1 tsp garam masala
Chaat masala (optional)
1. Heat the onion seeds, cumin and chilli flakes in the coconut oil once fragrant add the onion with a pinch of salt. When browned add the tomato paste, garlic and ginger cook this out for 2 mins.
2. Add the coconut milk and reduce for 10 mins before adding the spinach and cooking out for 10 mins season to taste with salt
3. Heat coconut oil with the spices to create a spicy oil topping and a dusting of chaat masala is a nice finishing touch
