Brookies
You’ll need
240g dark chocolate
60g unsalted butter
1 tsp instant coffee
2 large eggs
60g light brown sugar
60g caster sugar
90g plain flour
1 tsp bicarbonate soda
60g dark choc chips
pinch of sea salt
Method
Makes 6-8 cookies
Add the chocolate, butter and coffee to a bowl over simmering water and melt, once completely melted set aside to cool a bit (5-10 mins)
Whisk the eggs with the two types of sugar until pale in colour and a bit foamy but still liquid
Mix the melted chocolate mix into the egg mix
Sieve in the flour and bicarb soda, fold that through gently and final stir through 50g of the chocolate chips
Pre heat the oven to 180c fan
Spoon out the mix onto lined baking sheet, leaving enough space for them to expand
bake for 12 mins, then immediately top with more choc chips and a sprinkle of sea salt
